Step-by-Step Guide
- Using a large skillet set over medium heat, add the ground beef, onion, garlic, and seasonings. Crumble the ground beef until fully cooked, draining some of the excess fat, leaving about 2 tbsp of fat in the pan. Set aside.

Corn tortillas dissolve quickly in liquid. Do not simmer the tortillas in the sauce for 20 minutes, or you will have “Enchilada Mush.”
