Description

A revolutionary gluten-free and keto Zero Carb Yogurt Bread! Made with Greek yogurt, this bread has a soft, tender crumb that’s perfect for toast and sandwiches. Incredibly easy to make with just a handful of ingredients.


Ingredients

6 large eggs

½ cup full-fat Greek yogurt (unsweetened, plain)

¼ cup melted butter or coconut oil

1 tablespoon baking powder

¼ teaspoon salt

½ teaspoon xanthan gum or psyllium husk powder

Optional: ½ cup finely ground almond flour


Instructions

1. Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper.

2. In a large bowl, whisk together the eggs, yogurt, and melted butter until smooth and creamy.

3. Add the baking powder, salt, xanthan gum (or psyllium), and optional almond flour. Mix until the batter is well-combined.

4. Pour the batter into the prepared loaf pan and smooth the top evenly.

5. Bake for 35–45 minutes, until the top is golden and a toothpick inserted into the center comes out clean.

6. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack. Allow it to cool completely before slicing.

Notes

Cool Completely: Do not slice the bread until it has cooled completely. This step is critical for the bread’s structure.

Best When Toasted: Store leftovers in the refrigerator. Toast slices before serving to refresh the texture.
