Ingredients
1 ½ cup gluten-free rolled oats
¾ cup gluten-free all-purpose flour blend
¾ cup brown sugar or coconut sugar
1 teaspoon baking powder
¼ teaspoon salt
½ cup melted unsalted butter (or vegan butter)
2 cups fresh strawberries, sliced
½ cup sliced almonds (optional)
Instructions
1. Preheat the oven to 350º F. Lightly grease an 8×8-inch baking pan.
2. In a large bowl, whisk together the gluten-free oats, gluten-free flour, brown sugar, baking powder, and salt.
3. Pour in the melted butter and mix with a spatula until a moist, crumbly mixture forms.
4. Press half of the crumble mixture firmly into the bottom of the prepared pan to form a crust.
5. Arrange the sliced strawberries in an even layer on top of the crust.
6. Sprinkle the remaining crumble mixture evenly over the strawberries. Top with sliced almonds, if using.
7. Bake for 25-30 minutes, until the top is golden brown and the filling is bubbly.
8. Remove from the oven and let the bars cool completely in the pan before slicing.
