Description

These Mini Grilled Cheese bites are the ultimate comfort food shrunk down into a fun, gluten-free snack. Crispy on the outside and oozing with melted cheese on the inside, they are perfect for kids’ lunchboxes, party appetizers, or a quick afternoon treat. Serve them on their own or alongside a warm cup of tomato soup for dipping.


Ingredients

4 slices gluten-free bread (standard loaf or gluten-free baguette)

2 tablespoons butter, softened (or dairy-free butter substitute)

3 ounces sharp cheddar cheese, sliced or shredded (ensure gluten-free)

1 ounce mozzarella cheese (optional, for extra cheese pull)

Fresh parsley, chopped (optional garnish)

Tomato soup or marinara sauce (optional, for dipping)


Instructions

1. Prep Bread: If using standard slices of gluten-free bread, you can cut the crusts off for a neater look, or leave them on. If using a baguette, slice into thin rounds.

2. Butter: Spread the softened butter generously on one side of each slice of bread.

3. Assemble: Place half the bread slices, butter-side down, on a cutting board. Layer the cheddar and mozzarella cheese on top. Top with the remaining bread slices, butter-side up.

4. Heat Pan: Heat a non-stick skillet or griddle over medium heat.

5. Grill: Place the sandwiches in the hot pan. Cook for 3–4 minutes, or until the bottom is golden brown and crispy. carefully flip and cook for another 2–3 minutes until the second side is golden and the cheese is completely melted.

6. Cut & Serve: Remove from the pan. If using full slices of bread, cut each sandwich into quarters (triangles or squares) to make them ‘mini.’ Serve warm with dipping sauce if desired.

Notes

Bread Tips: Gluten-free bread can sometimes be dry; using plenty of butter ensures it crisps up nicely rather than becoming hard.

Add-ins: For an adult version, add caramelized onions, sliced tomato, or a layer of pesto inside the sandwich.

Batch Cooking: If making these for a crowd, you can bake them on a sheet pan at 400°F (200°C) for 10 minutes, flipping halfway through.

Dairy-Free: Use vegan butter and your favorite melting vegan cheese to make this dairy-free.
