Ingredients
½ cup filtered water
½ cup fresh lemon juice
1 tablespoon lemon zest
⅛ teaspoon turmeric powder
¼ cup honey (or to taste)
4 tablespoons gelatin powder
Instructions
1. In a small saucepan, combine the water, lemon juice, lemon zest, turmeric, and honey. Bring to a boil over medium heat.
2. Reduce the heat to low and simmer for 10 minutes to infuse the flavors. (Optional: Strain through a sieve to remove zest for a smoother texture).
3. Remove the saucepan from the heat. Slowly sprinkle the gelatin powder over the liquid, one tablespoon at a time, whisking vigorously and constantly to incorporate without clumps.
4. Pour the mixture into silicone molds or a glass dish.
5. Refrigerate for at least 2 hours, or until completely solidified.
6. Remove the gummies from the molds and serve. Store in the refrigerator.
Notes
Creamy Variation: For a ‘Golden Milk’ style gummy, substitute the water with ¾ cup coconut milk and reduce lemon juice to ¼ cup. Increase turmeric to 1-2 teaspoons.
Smooth Texture: If you dislike the texture of zest, be sure to strain the liquid before adding the gelatin.
Storage: Keep these gummies in an airtight container in the fridge for up to 2 weeks.
