Ingredients
For the Dough:
1 ½ cups all-purpose gluten-free flour with xanthan gum
¾ teaspoon kosher salt (+ extra for sprinkling)
2 teaspoons baking powder
1 cup plain fat-free Greek yogurt (or dairy-free)
For the Baking Soda Bath:
¼ cup baking soda
4 ½ cups water
For Cinnamon Sugar Option:
¾ cup granulated sugar
1 ½ teaspoons ground cinnamon
4 tablespoons melted butter (or dairy-free)
Instructions
1. Preheat oven to 400°F and line a baking sheet with parchment paper.
2. In a large bowl, whisk together the flour, ¾ tsp salt, and baking powder. Add the yogurt and mix with a mixer for 2-3 minutes until a dough ball forms.
3. On a lightly floured surface, knead the dough a few times, then divide into 4 pieces. Roll each piece into a rope about 8-10 inches long.
4. Cut each rope into 1-inch pieces and place them on the baking sheet.
5. In a saucepan, bring the water and baking soda to a rolling boil. Drop the bites in, a few at a time, for exactly 10 seconds. Remove with a slotted spoon and place back on the baking sheet.
6. If making salted bites, sprinkle them with coarse salt now while they are wet.
7. Bake for 15 minutes, until golden brown.
8. For cinnamon sugar bites, dip the warm, baked bites in melted butter, then toss them in a mixture of the sugar and cinnamon until well coated. Serve immediately.
