Description

This easy gluten-free peach cobbler features a sweet, bubbly peach filling and a soft, cake-like topping. It’s the perfect summer dessert that’s simple to make and guaranteed to be a crowd-pleaser.

Ingredients

Scale

For the Peach Filling:

6 cups sliced fresh or frozen peaches (thawed if frozen)

1/2 cup brown sugar, packed

1/4 cup water

2 tablespoons cornstarch

1 tablespoon lemon juice

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

2 tablespoons unsalted butter

For the Gluten-Free Topping:

1 1/2 cups 1:1 gluten-free all-purpose baking flour

1/2 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, cold and cubed

1 large egg

1/2 cup milk

1 teaspoon vanilla extract

Instructions

1. Prepare the Filling: Preheat your oven to 375°F (190°C) and grease a 9×9 inch baking dish. In a medium saucepan, combine the sliced peaches, brown sugar, water, lemon juice, cinnamon, and nutmeg. Cook over medium heat until simmering. In a small bowl, whisk cornstarch with 2 tablespoons of cold water to create a slurry, then stir it into the peach mixture. Continue to cook for 1-2 minutes until the filling thickens. Remove from the heat, stir in the butter until it melts, and then pour the finished filling into your prepared baking dish.

2. Mix the Topping: In a large bowl, whisk together the gluten-free flour, granulated sugar, baking powder, and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to cut it into the flour mixture until it resembles coarse crumbs. In a separate bowl, whisk the egg, milk, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined—be careful not to overmix.

3. Assemble and Bake: Drop spoonfuls of the topping batter evenly over the hot peach filling. Bake for 30-35 minutes, or until the filling is bubbly and the topping is a beautiful golden brown. Allow the gluten free peach cobbler to cool for at least 15 minutes before serving to allow the filling to set.

Notes

Fruit Variations: Feel free to add 1 cup of fresh or frozen berries (like blueberries or raspberries) to the peach filling for a mixed fruit cobbler.

Dairy-Free Option: To make this dairy-free, use a high-quality plant-based butter substitute and an unsweetened plant-based milk (like almond or soy milk) in the topping.

Storage: Store leftover cobbler covered in the refrigerator for up to 3 days. Reheat in the microwave or in a 350°F oven until warm.
