Ingredients
— The Patties —
1 lb (450g) ground chicken
½ cup gluten-free breadcrumbs (or almond flour for grain-free)
1 large egg, lightly beaten
2 tablespoons fresh parsley, finely chopped (or green onions)
1 teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon smoked paprika
½ teaspoon salt
¼ teaspoon black pepper

2 tablespoons olive oil or avocado oil
Instructions
1. Mix Ingredients: In a large mixing bowl, combine the ground chicken, gluten-free breadcrumbs, egg, parsley, garlic powder, onion powder, smoked paprika, salt, and pepper.
2. Combine: Use your hands to gently mix everything together until just combined. Do not overwork the meat, or the patties may become tough.
3. Shape Patties: Divide the mixture into 4 equal portions. Wet your hands slightly (to prevent sticking) and shape each portion into a patty about ½-inch thick. Press a small indent in the center of each patty to prevent it from puffing up while cooking.
4. Heat Pan: Heat the olive oil in a large non-stick skillet or cast-iron pan over medium heat. Wait until the oil is shimmering.
5. Cook: Place the patties in the hot skillet. Cook for 4–5 minutes per side, or until golden brown and a crispy crust forms. The internal temperature should reach 165°F (74°C).
6. Rest & Serve: Remove the patties from the pan and let them rest on a plate for 5 minutes (this keeps the juices inside). Serve on buns or with your favorite dipping sauce.
Notes
Sticky Mixture: Ground chicken is naturally stickier than beef. Wetting your hands with water or oil before shaping makes the process much easier.
Air Fryer Option: You can cook these in an air fryer at 375°F (190°C) for 10–12 minutes, flipping halfway through.
Breadcrumb Sub: For a keto/low-carb version, swap the breadcrumbs for superfine almond flour or crushed pork rinds.
Freezing: Uncooked patties can be frozen between layers of parchment paper for up to 3 months. Thaw in the fridge before cooking.
