Description

The ultimate Gluten-Free Cheese Cracker recipe! This easy, homemade version is incredibly crispy, flaky, and packed with real extra-sharp cheddar flavor. So much better than store-bought and a perfect copycat for Cheez-Its.


Ingredients

Scale

120g (1 cup) gluten-free all-purpose flour blend

¼ tsp xanthan gum (omit if your blend contains it)

¼ tsp salt

225g (8 ounces) extra-sharp cheddar cheese, finely grated

45g (3 tbsp) cold unsalted butter, cubed

30g (2 tbsp) cold water


Instructions

1. Preheat the oven to 350°F (180°C). Line two large baking sheets with parchment paper.

2. In a large bowl, whisk together the gluten-free flour blend, xanthan gum, and salt.

3. Add the finely grated cheese and cold cubed butter. Use your fingertips to work them into the flour until you have a crumbly mixture resembling breadcrumbs.

4. Add the cold water and mix with a spatula, then your hands, to form a smooth, workable dough.

5. Divide the dough in half. Roll one half out between two sheets of parchment paper until it is about 1/16-inch thick.

6. Remove the top parchment. Use a pizza cutter or knife to cut the dough into 1-inch squares. Use a skewer to poke a hole in the center of each square.

7. Transfer the crackers on the parchment paper to a baking sheet. Repeat with the second half of the dough.

8. Bake one sheet at a time for 12-15 minutes, until golden brown with slightly darker edges.

9. Let the crackers cool completely on the baking sheet before serving. They will crisp up as they cool.

Notes

Use Cold Ingredients: Using cold butter and cold water is key to a flaky, crispy cracker texture.

Roll Thinly: The secret to a truly crispy cracker is to roll the dough as thinly as possible before baking.

Storage: Store the cooled crackers in an airtight container at room temperature. They will stay crispy for about one week.
