This recipe for gluten free brownie waffles delivers all the rich, fudgy satisfaction of a decadent brownie but comes together in minutes in a waffle maker. It’s a game-changing, flourless treat that’s perfect for a quick chocolate craving.
Ingredients
1 heaping tablespoon sugar-free creamy peanut butter
1 large or extra large egg
2 teaspoons cocoa powder
2 teaspoons monkfruit sweetener (optional, for a sweeter waffle)
1 pinch salt
1 1/2 tablespoons sugar-free semi-sweet chocolate chips, divided
1–2 teaspoons of water, as needed
Instructions
1. In a small bowl, combine the creamy peanut butter, egg, cocoa powder, pinch of salt, optional sweetener, and 1 tablespoon of the semi-sweet chocolate chips.
2. If the batter is too thick, add 1-2 teaspoons of water as needed to thin the mixture slightly.
3. Preheat a mini waffle maker according to the manufacturer’s directions.
4. Place half of the mixture into the hot waffle iron and top with half of the remaining chocolate chips.
5. Cook for 2-3 minutes, or until steam is no longer coming from the machine.
6. Carefully remove the waffle and repeat the process with the remaining batter and chocolate chips.
